Salmon Fritatta for Brunch

Add wild-caught savoury salmon to make brunch even better!

Brunch is our favourite meal – it always feels a little special, a little fancy, and a little extra delicious. Seafood is a must for brunch, the perfect low-fat, high-quality protein to give you that pleasantly full feeling for the rest of the day. 

For your next weekend get-together at home, try whipping up this Salmon Frittata for something a little extra special that’s light but fulfilling, too: 
  • Preheat the oven to 350 degrees. 
  • Crack 6 eggs into a bowl and add a couple tablespoons each of milk and cream; whisk until blended. 
  • Toss about a quarter of an onion, chopped, and into an oven-safe pan and fry over medium heat with a little olive oil, salt, and pepper until clear. 
  • Add a single salmon fillet, cut into thin slices, and a handful of chopped black olives to the pan and cook for another minute or so. 
  • Optional: add spinach, broccoli or both!
  • Pour your egg mixture over the top of the salmon, olives, and onion and let cook for a few minutes, without stirring, until the edges look firm.  
  • Take an 8-ounce package of cream cheese and cut it into 1 inch cubes; sprinkle the cubes on top of your frittata. 
  • Pop it in your preheated oven for an additional 20 minutes until the cheese melts and it’s cooked through. 

Easier to make than a quiche, but just as fun – and just as popular! Try serving with some whole-wheat scones and don’t forget the mimosas to make your brunch an extra special occasion.
