Pelican Seafood Launches New ‘Seafood Made Easy’ Cooking Classes
Award-Winning Chef Ben Baird to Share Delicious Tips, Tricks and Recipe

Join Pelican Seafood’s fun-loving Executive Chef Ben Baird and his knife-wielding sidekick, master fishmonger Nathan Rogers. This dynamic duo of fish will demystify the basics of seafood cookery. Fishy Fundamentals will share the secrets of purchasing fresh fish and seafood. How to shuck oysters, steam mussels and we will even unveil the technique of searing the perfect scallop. Arrive with an appetite because you will also be baking, poaching and eating everything that you cook. This casual night in the kitchen will encourage you to try new techniques, taste delicious wine pairings by Cave Spring winery and ask lots of questions.
The class takes place in our prep kitchen directly behind the Pelican Grill kitchen so you will also experience the action of the night’s dinner service. We provide aprons and everything you will need. Chef’s Paradise will provide cooking products for you to test drive and a promo card to use the next time you shop like a pro at Ottawa’s best kitchen supply store. Wear comfortable shoes and get ready to cook because tonight you are part of our kitchen crew!

Building on the techniques from Fishy Fundamentals, Pelican Seafood’s executive chef Ben Baird and master fishmonger Nathan Rogers will take you on a journey to the next level of fish cookery. Grilling herb stuffed whole fish, fresh linguine with clam sauce and a creating a delicious pan sauce for your perfectly seared scallops are some of the skills that you will experience. How are steaks, fillets and deboned fish created? Fishmonger Nathan will cut the fish to suit your dish and share with you which cut suits which dish. You will saute shrimp like a pro after you have learned to devein them and there will be delicious wine pairings by Cave Spring winery. This casual night in the kitchen will include lots of hands on cooking and don’t forget to arrive with an appetite because you will eat everything that you cook.

Pelican Seafood’s Executive Chef Ben Baird is joined by Knifewear’s knife mbassador Christopher Lord. This sharp duo will share knife and sushi making skills in an approachable way for novice cooks. Christopher will be bring an arsenal of Japanese knives from Knifewear for you to test drive while Ben walks you through all the preparations of delicious fresh sushi rolls. Christopher will also set up a sharpening station if you’d like to hone your skills at making your own steel as sharp as it can be.
Pelican Seafood’s premiere fishmonger Nathan Rogers will share the do’s and don’ts of purchasing sushi grade fish while chef Ben will tempura fry shrimp and share how to cook a perfect batch of sushi rice. We provide everything you will need including an apron for this hands on class. There will be lots of opportunity to practice your technique and try different ingredient combinations to suit your individual
tastes but watch out for the wasabi!
We will provide Japanese beer and saki to accompany your sushi and don’t forget to bring a container to carry home your leftovers!
