Good to know
- Keeping it
- Keep it in the coldest part of your fridge, still wrapped, on a plate. Cook it within 1 to 2 days.
- How to cook it
- Roast it whole: skin side down on a lined tray, brush with oil or a glaze, season, and bake at 400 °F (200 °C). Allow about 10 minutes for every inch (2.5 cm) of thickness at the thickest part: most pieces take 15 to 25 minutes. It’s done when the centre turns opaque and the flesh flakes easily with a fork. Serve it at the table and cut portions there: it stays moist that way. With a thermometer: for a moist, just-cooked centre, take it off the heat at 50 to 52 °C (122 to 125 °F) in the thickest part. Health Canada recommends 70 °C (158 °F) for fish. Cook to that if you’re serving anyone who is pregnant, 60 or over, 5 or under, or has a weakened immune system.
