Keeping it

Keep them frozen and take out only what you need. Once thawed, cook them within a day.

Thawing

Thaw what you need overnight in the fridge. In a hurry: in a colander under cold running water for 5 to 10 minutes.

How to cook it

Pat them dry. Sauté or grill over high heat for 1 to 2 minutes a side, until pink and just firm. A loose C shape means they’re done; a tight O means they’re overcooked. Good for scampi, stir-fries and skewers.
