Keeping it

Keep it frozen until you need it. Once thawed, eat it within 2 days.

Thawing

Thaw overnight in the fridge. Drain it and pat it dry before using.

How to cook it

Already cooked and ready to eat. For lobster rolls, toss it with a little mayonnaise, lemon and chives. To serve it warm, heat it gently in butter for 1 to 2 minutes: longer makes it tough. Stir it into pasta or chowder at the very end.
