Good to know
- Keeping it
- Keep it in the coldest part of your fridge, still wrapped, on a plate. Cook it within 1 to 2 days.
- How to cook it
- Char is thinner than salmon and cooks quickly. Pat the skin very dry, season, and lay it skin side down in a hot oiled pan. Press it flat for the first 30 seconds, cook 3 to 4 minutes until the skin is crisp, then flip for 1 minute. It’s done when the centre turns opaque and the flesh flakes easily with a fork. With a thermometer: for a moist, just-cooked centre, take it off the heat at 50 to 52 °C (122 to 125 °F) in the thickest part. Health Canada recommends 70 °C (158 °F) for fish. Cook to that if you’re serving anyone who is pregnant, 60 or over, 5 or under, or has a weakened immune system.
