Good to know
- How much to buy
- About 6 per person as a starter, 12 if oysters are the main event.
- Keeping it
- Keep them cup side down in the fridge under a damp cloth, never in water or a sealed bag. Eat them within 2 days.
- How to cook it
- To shuck: hold the oyster flat side up in a folded towel. Push an oyster knife into the hinge at the narrow end and twist until it pops. Slide the knife along the top shell to cut it free, then under the oyster to loosen it. Keep the juice in the shell. Throw away any oyster that was open and didn’t close when tapped. Serve them on ice with lemon and mignonette. Or barbecue them whole over high heat until they pop open, 5 to 8 minutes. Health Canada advises people who are pregnant, adults 60 and over, children 5 and under, and anyone with a weakened immune system not to eat raw oysters or raw fish. Barbecued until they open, they’re cooked.
