Keeping it
Keep it in the coldest part of your fridge, still wrapped, on a plate. Cook it within 1 to 2 days.
How to cook it
Halibut is lean, so the only way to spoil it is to overcook it. Pat dry, season, and sear in a hot pan with oil for 3 to 4 minutes until golden. Flip, add a knob of butter, and baste for 2 to 3 minutes more. Or bake at 400 °F (200 °C) for 12 to 15 minutes. It’s done when the centre turns opaque and the flesh flakes easily with a fork. Take it off the heat the moment it does. With a thermometer: for a moist, just-cooked centre, take it off the heat at 55 to 57 °C (130 to 135 °F) in the thickest part. Health Canada recommends 70 °C (158 °F) for fish. Cook to that if you’re serving anyone who is pregnant, 60 or over, 5 or under, or has a weakened immune system.
