Pelican on CBC All In A Day: Hosting an oyster feast including shucking and killer baked oysters

Mario, from CBC, heads to Pelican Seafood Market and Grill on Bank Street for a primer on hosting your own oyster feast, including shucking your own and preparing killer baked oysters too! Click below to listen.

Recipe:

Baked Oysters: Enough for 8 oysters

Ingredients:

8 oysters on the ½ shell
¼ of a baguette (about 1 cup)
1 strips of bacon, cooked
2 cloves of roasted garlic
2 tablespoons parsley, about ¼ of a bunch
2 tbsp olive oil
2 tbsp chive, about ⅓ of a bunch
Juice of ¼ lemon
2 tbsp finely grated parmesan
Salt and pepper to taste
Instructions:

Preheat the oven to 375 degrees.

Cut the baguette into small pieces and run it through the food processor to make some large fresh breadcrumbs.

Cook bacon until just crispy and break up into small pieces.

Roast 2 cloves of garlic, many ways to do this. You could also just chop and fry the garlic in the olive oil. I would avoid using raw garlic in this recipe.

Wash and chop parsley.

Finely chop chives.

Mix all ingredients together and season to taste with salt and pepper.

Top oysters on the ½ shell with topping and bake for 8-12 minutes at 375 degrees or until oyster is hot and topping is a nice golden brown.

Allow to cool for a few minutes and enjoy!
