Whitefish for a Working Lunch
Looking for more ways to Freshen up your diet with seafood? Whether it’s for breakfast, lunch, dinner or snacks, seafood fits into your meal plan with speed and lots of bonus nutritional benefits. Here’s another great idea to add to your seafood repertoire!
Did you know that white-fleshed fish is lower in fat than any other animal protein source? That makes halibut – one of our fave whitefishes – an excellent choice for a light lunch. Add in the fact that a serving contains half of your daily vitamin b12 requirement – used to make red blood cells and improve nerve function – and it’s a power lunch for sure!
Turn this Halibut and Corn Salsa recipe into a real winner by prepping the salsa the night before. The fish provides the perfect warm base for the salsa flavours and it fries up in just a few minutes.
Pick up one fresh halibut fillet per person from our market.
Add the veggies for the salsa to a bowl: a cup of cooked corn kernels, a half a sliced red onion, a medium sliced avocado, 1 cup halved grape tomatoes.
Make it saucy! Add in a tablespoon red wine vinegar, a tablespoon fresh lime juice, a tablespoon of olive oil, and some salt and pepper, then toss it all together. Store in the fridge until needed.
When you’re ready to eat, heat olive oil in a pan over medium-high heat and add your fish fillet, skin side down. Cook until the skin gets nice and crispy, about 3 to 5 minutes. Then flip and let fry 2 to 3 minutes more until cooked through.
Serve fish on a plate with plenty of salsa (which should make up to 4 servings). Leftover salsa means you’re ready for tomorrow’s lunch, too!
