A centre-cut block from the tuna loin, frozen. “Saku” means block in Japanese: an even, clean shape that’s easy to slice for sushi and sashimi, or sear whole for tataki. Thaw in the fridge overnight, still sealed, and slice while very cold. Health Canada advises people who are pregnant, adults 60 and over, children 5 and under, and anyone with a weakened immune system not to eat raw fish.
