Keeping it

Keep them frozen until you need them. Once thawed, cook them within a day.

Thawing

Thaw overnight in the fridge. In a hurry: in a sealed bag in cold water for 20 to 30 minutes. Drain them and pat them dry.

How to cook it

Small and sweet, they cook in a minute or two. Sauté in hot butter for 1 to 2 minutes, just until opaque. Or stir them into pasta, risotto or chowder for the last 2 minutes.
