Good to know
- Keeping it
- Already thawed, so don’t refreeze it. Keep it in the fridge and cook it within a day.
- How to cook it
- The secret is a very dry scallop and a very hot pan. Pat them dry on paper towel, season with salt just before cooking, and sear in a smoking-hot pan with a little oil for about 2 minutes, until a golden crust forms. Flip, add a knob of butter, and cook 1 to 2 minutes more. It’s done when it’s just opaque in the centre and springs back when pressed. With a thermometer: for a just-cooked scallop, take it off the heat at 50 to 52 °C (122 to 125 °F) in the centre. Health Canada recommends 74 °C (165 °F) for shellfish. Cook to that if you’re serving anyone who is pregnant, 60 or over, 5 or under, or has a weakened immune system.
